Better (Egregiously) Late than Never?

Listen people, I tried, I really did.  I would love to say that this was the best baking experience I’ve ever had and everything turned out perfect and buttery-good but, well, that would be a lie.  June’s Daring Bakers challenge really seemed like it was going to be a success, and it would have been, I swear.  There’s no way around it; I thought I could be slick and take all the shortcuts I wanted.  However, all of those “little shortcuts” joined forces against me and added up to one big flop.

Here’s what happened.  I thought, innocently enough, that I could make this danish braid on the LAST DAY before the challenge was due.  That was definitely mistake number one.  Then, I misread the the recipe and drastically underestimated the amount of time this dough would need to rest, chill, and take painfully long dough vacations on either the counter or fridge: mistake nubmer two.  Mistake number three and, I think, the true nail in the coffin, was my assumption that I could skip the 30 minute chillings between each butter layer insertion…even though the recipe specifically stated that 30 minutes was necessary.  How could I have been so naive?  Well, I learned my lesson: do not mess with yeasted pastry.  The pastry is the boss.  My poor neglected braid was not at all happy about my laziness, and to get back at me, it completely refused to rise.  As you might guess, it also did not cook through.  But it looked ok, right??? That being said, I think this recipe has potential.  It seems like most of the other Daring Bakers chose to actually follow the recipe and were really happy with the results.  Am I a bit jealous?  No, of course not…
